JRM Hospitality is partnering with an established hospitality operator to find an exceptional Assistant General Manager for an exciting premium restaurant opportunity in Sydney CBD.

We're looking for a polished, energetic hospitality professional who knows how to run a serious restaurant while still loving the buzz of being on the floor. This is a substantial operation requiring a leader who can balance refined service, strong commercial awareness and genuine hands-on hospitality.

The restaurant will deliver a vibrant, premium Italian-inspired experience - sophisticated without being stuffy, energetic without compromising on standards. The successful candidate will work closely with senior leadership and an accomplished culinary team to drive the restaurant, develop its people and create a service culture guests want to return to.

The Role

• Lead from the floor, driving service standards and setting the pace for the wider front-of-house team.
• Support the General Manager across all aspects of daily restaurant operations.
• Recruit, train, mentor and develop a polished, high-performing FOH team.
• Create an engaging service culture balancing professionalism, personality and genuine hospitality.
• Manage busy services while maintaining attention to detail and a seamless guest experience.
• Take ownership across rostering, labour management, training, systems and operational performance.
• Work closely with the kitchen leadership team to create a cohesive FOH and BOH operation.
• Develop future leaders within the business and maintain clear accountability across the management team.
• Build relationships with regular guests and become a visible presence within the restaurant.

About You

• An experienced Assistant General Manager, Restaurant Manager or General Manager from a premium restaurant environment.
• Previous experience managing a busy, large-scale restaurant operation is essential.
• Italian or premium European restaurant experience would be highly regarded.
• A natural floor presence - confident, engaging and genuinely passionate about looking after guests.
• Strong people leadership with proven experience training and developing restaurant teams.
• Commercially astute with a solid understanding of labour, rostering and restaurant financials.
• Polished and detail-focused, but with the personality and energy to suit a vibrant restaurant environment.
• Comfortable working alongside ambitious culinary and operational leadership.
• Ready to take ownership, challenge standards and continue progressing your management career.
• Full Australian working rights are essential.
