Bar Manager – Skyline Bar | Crowne Plaza Geelong

Offering crafted cocktails, a curated selection of local wines, beers and spirits, and share plates inspired by the region’s finest produce, Skyline Bar is the ultimate destination to unwind, connect, and take in Geelong from above.

We are now seeking a passionate and driven Bar Manager to lead this iconic venue and position it as a standout destination in the region.

A little taste of your day-to-day

Reporting to the Director of Food & Beverage, you will:

  • Drive the positioning of Skyline Bar as a premier destination venue
  • Design and implement bar-specific SOPs across service excellence, operations, compliance, and guest engagement
  • Lead the creation of innovative beverage programs, including signature cocktails, premium wine and spirits lists, and seasonal offerings
  • Deliver exceptional, memorable guest experiences aligned with IHG’s True Hospitality ethos
  • Recruit, train, and mentor a high-performing team of supervisors, bartenders and F&B attendants
  • Partner with the culinary team to develop food and beverage pairings that elevate the guest experience
  • Oversee daily operations including staffing, scheduling, workflow and performance management
  • Support budgeting, cost control, and revenue growth initiatives
  • Ensure full compliance with RSA, licensing laws, and safety standards
  • Collaborate across departments (sales, events, front office) to ensure seamless guest experiences

What we need from you

We’re looking for a dynamic leader who can create an experience as memorable as the view.

You’ll bring:

  • Minimum 2 years’ experience in premium bar or multi-outlet hospitality, with proven leadership capability
  • A strong track record in hotel bars, upscale venues, or high-performing standalone establishments
  • Deep beverage knowledge and a passion for mixology, wine, spirits, and guest engagement
  • End-to-end bar operations experience, including procurement, inventory management, ordering, logistics, and administrative controls
  • Strong financial and stock control skills, with the ability to manage costs, reduce wastage, and optimise margins
  • Current RSA and Food Handling Certificate
  • Strong leadership skills with experience in team development, training, and coaching
  • A creative mindset with the ability to design unique, market-leading experiences
  • Commercial acumen to drive revenue while maintaining exceptional standards
  • Full working rights in Australia
  • Excellent written and spoken English
