Key Responsibilities

  • Lead and manage all daily kitchen operations.
  • Supervise, train, and motivate the kitchen team.
  • Ensure consistent, high-quality food preparation and presentation.
  • Maintain exceptional food safety and hygiene standards.
  • Manage kitchen rosters and staff performance.
  • Monitor food costs, labour costs, and kitchen productivity.
  • Control stock levels, ordering, and supplier relationships.
  • Minimise food waste and maximise kitchen efficiency.
  • Develop seasonal specials and contribute to menu innovation.
  • Ensure all recipes and portion sizes are followed consistently.
  • Maintain a clean, organised, and safe kitchen environment.
  • Coordinate service to ensure smooth communication between the kitchen and front-of-house team.
  • Handle equipment maintenance and report any repairs required.
  • Ensure compliance with all WHS and food safety regulations.
  • Lead by example with professionalism, positivity, and teamwork.

What We’re Looking For

  • Previous experience as a Head Chef or Senior Sous Chef.
  • Strong leadership and communication skills.
  • Experience managing kitchen operations and food costs.
  • Excellent knowledge of food safety and HACCP.
  • Ability to perform well under pressure.
  • Passion for Mexican cuisine (or willingness to learn and innovate).
  • A positive attitude and a team-first mindset.
