Brooklyn Boy Bagels – voted 'Best Bakery' at the Australian Small Business Awards and 'Best Bagels' in the Asia-Pacific region at New York's BagelFest – is looking for an energetic, passionate and talented Pastry Chef to join our growing team.
Based in Marrickville, we produce a premium range of bagels, pastries, breads, cookies, desserts and specialty baked goods supplied to wholesale customers across Sydney, as well as our own retail cafés.
This is an exciting opportunity for a skilled pastry professional who takes pride in quality, consistency, innovation and craftsmanship.
About the Role
As a Pastry Chef, you will be responsible for producing high-quality pastries and baked products while maintaining exceptional food safety, presentation and production standards.
You will work closely with our Production Team and Operations Management to ensure products are produced efficiently, consistently and to the highest quality standards.
Key Responsibilities
- Lead daily pastry and bakery production — croissants, cookies, cakes, and specialty pastries
- Manage and train a small, skilled production team
- Oversee dough preparation, proofing, boiling, baking, and finishing processes
- Ensure preventive maintenance and care of bakery equipment
- Contribute to new product development and seasonal launches
- Develop new products in collaboration with management and the Head Chef
- Drive consistency, efficiency, and continuous improvement across production
- Manage all operations and production outcomes in the Marrickville bakery
- Ensuring financial targets are met, including P&L accountability and cost control, by leading, identifying and executing cost-saving measures
- Actively drive development and improvement of current processes to improve and optimize operations
- Manage quality control of all products that leave the bakery
- Quality Assurance, HACCP compliance and certification, and Work, Health & Safety (OH&S) program management
- Develop a cohesive team culture that reflects a positive work environment
- Recruitment & performance management of your team
- Supervise, train, coach and develop staff to promote a productive environment with a culture of continual improvement
- Procurement and supplier negotiations (equipment + materials
Skills & Experience
- Qualified Pastry Chef with minimum 3 years’ commercial experience
- Previous manufacturing or production experience highly desired
- Solid knowledge of doughs, laminated pastries, and bakery production systems
- Highly self-motivated individual with the capability to work collaboratively with excellent organizational skills and impeccable eye for detail
- Technical skills to continually improve bakery efficiency, hygiene and quality
- Strong leadership and people management skills
- Familiar with HACCP and GMP programs, and a strong understanding of various Australian Food Safety standards
- Financial and commercial acumen – experienced in and controls of wages, margins, P&L, and expenses
- Flexibility to work a combination of mornings, afternoons, evenings, along with weekends and ability to work public holidays.
Pay: $80,000.00 – $90,000.00 per year
