Company Description

Introducing something new in Australian hospitality.

The Saint Hotel is a village of venues designed to support the neighbourhood, a contemporary St Kilda institution built around hospitality, culture and connection. Spanning multiple bars, dining spaces, terraces and event areas, The Saint brings together the energy, eclecticism and social spirit that has long defined Fitzroy Street.

We’re not just opening venues, we’re creating places that bring people together. Experience-led in its approach, the venue is designed to feel woven into the fabric of St Kilda: somewhere locals can settle into regularly, visitors can discover naturally, and the neighbourhood can gather from day through to late night.

  • Deliver consistent, high-quality food across all services

  • Refine and execute menus in line with the venue's direction

  • Train, mentor and manage kitchen team performance

  • Maintain exceptional food safety, hygiene and Work Health and Safety (WHS) standards

  • Manage stock control, ordering, wastage and food costs

  • Oversee prep planning, service flow and kitchen organisation

  • Build a positive, motivated and professional kitchen culture

About You

You’re an experienced, hands‑on kitchen leader who leads by example. You take pride in both people development and operational excellence. You’ll also bring:

  • 5+ years' experience in professional commercial kitchens

  • Proven experience as a Head Chef

  • Strong leadership and communication skills

  • A calm, structured approach under pressure

  • A sound understanding of Australia food safety and WHS requirements

  • Availability across nights, weekends and rotating rosters

  • Shape one of Melbourne's most well-supported venues in an exciting growth phase

  • Be part of a passionate, ambitious and supportive kitchen team

  • Work in a beautifully designed, multilevel venue

  • Opportunities across à la carte service, events and functions

  • Genuine career progression within an expanding hospitality group

  • Ongoing training, development and staff benefits

  • A collaborative, inclusive and high-performance culture
