Meat Flour Wine is a family-owned Italian restaurant in Braeside, Victoria, combining traditional Italian cuisine with a modern dining experience. Founded by hospitality veteran Renato and his family, the restaurant specialises in premium steaks, handmade pasta, wood-fired pizza and carefully selected Australian and Italian wines. Following a major refurbishment after a fire in 2024, the restaurant reopened in June 2025 and continues to provide high-quality food, exceptional customer service and an authentic Italian dining experience, with plans for further expansion in Victoria.

Job Summary:

We are seeking an experienced and skilled Chef de Partie to join our culinary team. The successful candidate will be responsible for overseeing a specific section of the kitchen, ensuring the quality and presentation of dishes, and managing junior kitchen staff.

Key Responsibilities:

· Oversee a specific section of the kitchen, including grill, sauté, or pastry

· Assist with the preparation and execution of menu items

· Ensure the highest quality and consistency of food products

· Operate and maintain kitchen equipment, including ovens, stovetops, and knives

· Plan and organise daily food preparation and cooking activities within the assigned section to meet service standards and kitchen workflow.

· Demonstrate cooking techniques, guide junior staff on preparation and plating procedures, and support compliance with hygiene and food safety requirements.

· Monitor and control food costs within your section

· Train and manage junior kitchen staff, including delegating tasks and monitoring performance

· Collaborate with the executive chef and sous chef to develop and refine menu items

· Monitor inventory levels and assist with ordering supplies and ingredients

· Follow health and safety regulations, including proper food handling and storage procedures

· Maintain a clean and organised kitchen environment

· Participate in menu planning and development

· Work efficiently in a fast-paced kitchen environment

Requirements:

· Previous experience as a chef de partie or line cook in a restaurant

· Strong knowledge of culinary techniques and ingredients

· In-depth knowledge of specific section of the kitchen, including techniques, ingredients, and equipment

· Proven leadership skills and ability to manage junior kitchen staff

· Ability to work efficiently in a fast-paced environment

· Strong attention to detail and cleanliness

· Flexibility to work in different areas of the kitchen as needed

· Ability to manage and train junior kitchen staff

· Strong communication and interpersonal skills

Job Type: Full-time

Pay: $80,000.00 – $80,001.00 per year
