COMMIS CHEF - Coca Chu Restaurant

Located on Hamilton Island overlooking Catseye Beach, Coca Chu is a vibrant restaurant showcasing the bold flavours and aromatic ingredients of Southeast Asian cuisine. With a menu inspired by the region's diverse cooking styles, Coca Chu offers a lively dining experience where fresh ingredients, balanced flavours and authentic cooking techniques come together.

We're looking for a qualified Commis Chef to join our Coca Chu kitchen team. This is a great opportunity for a developing chef with an interest in Asian cuisine who wants to strengthen their skills working with vibrant flavours, fresh produce and fast-paced à la carte service alongside an experienced culinary brigade.

What you'll be doing

You'll work hands-on across preparation and service, supporting your section and senior chefs in delivering Coca Chu's Southeast Asian-inspired menu. You'll gain experience preparing fresh ingredients, sauces, marinades and dishes that showcase the distinctive flavours and cooking techniques of the region.

Working in a busy à la carte kitchen, you'll need to stay organised, maintain your mise en place and deliver consistent quality and presentation throughout service while continuing to develop your culinary skills.

What we're looking for

• Certificate III in Commercial Cookery (Essential)
• Previous experience working in a commercial à la carte restaurant kitchen
• Experience with Southeast Asian or Asian cuisine highly regarded
• Familiarity with Asian cooking techniques, ingredients, sauces and flavour combinations
• Experience with wok cooking, stir-frying or other Asian hot-section cooking highly regarded
• Ability to follow recipes, preparation methods and presentation standards consistently
• Strong organisation, teamwork and a genuine willingness to learn
