  • Creating innovative vegan dishes that reflect the restaurant’s contemporary plant-based identity.
  • Preparing, cooking and presenting food to consistently high standards.
  • Developing and documenting standard recipes, preparation procedures, portion sizes and presentation standards.
  • Supervising chefs, cooks, kitchen hands and other kitchen employees.
  • Allocating duties and coordinating food preparation during daily service.
  • Training and mentoring kitchen employees in cooking techniques, food presentation, food safety and workplace procedures.
  • Monitoring the quality of ingredients, food preparation, cooking and final presentation.
  • Ensuring consistency in taste, portion size, appearance and quality across all dishes.
  • Planning kitchen staffing requirements and assisting with the preparation of staff rosters.
  • Managing food, labour and operating costs within the approved kitchen budget.
  • Estimating food requirements and monitoring stock levels.
  • Ordering food, ingredients and kitchen supplies from approved suppliers.
  • Receiving and inspecting deliveries to ensure quality, freshness and accuracy.
  • Managing inventory, stock rotation and storage using appropriate food-safety procedures.
  • Minimising food waste and implementing efficient and sustainable kitchen practices.
  • Maintaining effective relationships with food and equipment suppliers.
  • Ensuring compliance with food-safety legislation, workplace health and safety requirements and the restaurant’s internal policies.
  • Maintaining a clean, hygienic, organised and safe kitchen environment.
  • Ensuring kitchen equipment is used correctly, maintained appropriately and reported for repair when necessary.
  • Working collaboratively with management and front-of-house employees to ensure efficient service and customer satisfaction.
  • Responding professionally to customer feedback concerning food quality, dietary requirements or menu items.
  • Assisting management with special events, catering, promotions and seasonal menu campaigns.
  • Contributing photographs, menu information and culinary ideas for the restaurant’s marketing and social-media activities.

QUALIFICATIONS AND EXPERIENCE

Applicants must have:

  • An AQF Diploma or higher qualification in Commercial Cookery, Hospitality Management or a closely related field, or an equivalent recognised overseas qualification.

  • Experience in a senior culinary or supervisory position, such as Head Chef, Sous Chef or Senior Chef.
  • Demonstrated experience supervising and training kitchen employees.
  • Experience developing menus, standardising recipes and controlling food and labour costs.
  • Strong knowledge of commercial food preparation, food safety, kitchen hygiene and stock-control procedures.
  • The ability to work effectively in a high-volume kitchen and maintain quality during busy service periods.

SKILLS AND ATTRIBUTES

The successful applicant will demonstrate:

  • Creativity and genuine interest in plant-based cuisine.
  • Strong organisational and time-management skills.
  • Sound understanding of menu costing, portion control and waste reduction.
  • Ability to work calmly and make effective decisions under pressure.
  • Excellent communication and interpersonal skills.
  • Commitment to maintaining high food-safety and workplace-safety standards.
  • Availability to work a flexible roster, including weekends, evenings and public holidays when required.

Experience in vegan cuisine, plant-based menu development and accommodating dietary requirements will be highly regarded.

  • An annual salary of $80,000–$85,000 plus superannuation.
  • The opportunity to lead and develop a dedicated kitchen team.
