SKETCH HOSPITALITY GROUP PTY LTD is looking for a Full-Time qualified chef to join our team. Sketch Manly is a vibrant and contemporary dining destination located in the heart of Manly, NSW, 2095 known for our innovative menu, fresh ingredients, and commitment to delivering exceptional dining experiences. We take pride in creating a welcoming atmosphere and offering dishes that showcase creativity and culinary expertise.

We are seeking a passionate and experienced Chef to join our dynamic team. The ideal candidate will have a flair for food innovation, a commitment to quality and thrive in a fast-paced environment across the following tasks:

  • Responsible for the entire kitchen operation, this includes rostering, recruitment, costing, staffing, stock rotation, stock ordering and menu design.
  • ordering and controlling kitchen stocks and quality maintenance of perishable items
  • Planning menus, estimating food and labour costs, and ordering food supplies
  • Monitoring quality of dishes at all stages of preparation and presentation
  • Discussing food preparation issues with Managers, Dietitians and kitchen and waiting staff
  • Demonstrating techniques and advising on cooking procedures
  • Preparing and cooking food
  • Explaining and enforcing hygiene regulations
  • Select and train staff, delegate tasks to other staff within the kitchen
  • Freeze and preserve foods

Skills:

A minimum of 1 year of culinary experience and/or relevant qualification.

  • hands-on experience with various kitchen equipment (e.g., grillers and pasta makers)
  • leadership skills
  • excellent time management abilities
  • up-to-date knowledge of cooking techniques and recipes
  • familiarity with sanitation regulations

Working Hours: 38 hours / per week

Work experience: At least 1 year of experience in a fast-paced kitchen environment.

Education/Skills:

Chef: Certificate IV in Commercial Cookery or Hospitality

Salary: $76,000- $86,000+ Superannuation
