Restaurant Manager

Garden City Hotel, BW Signature Collection

Location: 55 Jerrabomberra Avenue, Narrabundah ACT 2603

Employment type: Full time | Permanent

Salary: $80,000 to $90,000 plus superannuation

About the hotel

Garden City Hotel is a 4.5 star property in Canberra's inner south, five minutes from Manuka and Kingston and close to Fyshwick and the airport. We have 72 rooms, conference and meeting facilities, a gym and a lagoon-style pool.

Our food and beverage operation runs through the Nest Kitchen & Bar Restaurant on the ground floor. We serve breakfast seven days, dinner Monday to Saturday, and run bar trade, room service, and catering for the conferences, functions and private events held on site.

The role

We are looking for a Restaurant Manager to take full operational responsibility for the Nest Kitchen & Bar Restaurant. This is a hands-on management position covering everything from menu and pricing decisions through to floor supervision, staffing and financial reporting. You will report to the General Manager and work closely with the Head Chef and the conference and events team.

What you will be doing

  • Running daily service across breakfast, dinner and bar trade, including floor supervision and end-of-shift handover
  • Planning menus with the Head Chef, deciding the range and standard of meals and drinks we offer, and setting prices against budget
  • Ordering and controlling food and beverage stock, managing supplier accounts, and keeping stocktake and wastage records
  • Recruiting, inducting, training and supervising front of house and support staff, and preparing rosters in line with the Hospitality Industry (General) Award
  • Reporting weekly on revenue, cost of goods and wage cost, and working to agreed targets
  • Coordinating function and event bookings with the events team, from enquiry through to service on the day
  • Speaking with guests during and after service to check they are happy, and dealing with complaints as they come up
  • Keeping the restaurant, bar and service areas clean, presentable and compliant with ACT food safety requirements and liquor licensing conditions
  • Taking reservations, greeting and seating guests, and helping with orders during busy periods
  • Maintaining daily takings, banking and point of sale records

What we are looking for

  • At least three years of experience managing a restaurant, bar or hotel food and beverage venue
  • A qualification in hospitality or business management at diploma level or above, or equivalent experience in a comparable role
  • Proven experience with rostering, stock control, cost of goods management and point of sale systems
  • Current ACT Responsible Service of Alcohol certificate, or the ability to obtain one before starting
  • Food Safety Supervisor certificate, or the ability to obtain one before starting
  • Availability across a seven day roster, including early breakfast starts, evenings, weekends and public holidays
  • Good written and spoken English, and the confidence to deal directly with guests and suppliers
