Dum n Rum is an Authentic Kerala restaurant and has three branches- located at Stafford Heights(Brisbane 4053) and Spring Mountain (Ipswich 4300) The restaurant stems from owners’ desire to revive authentic Kerala and South Indian food in Brisbane. Dum n Rum revolves around different cuisines from the International favourite Punjabi Butter chicken to truly South Indian Masala Dosa to the Goan Vindaloo to the Kashmiri Rogan Josh to the unexplored dishes of Kerala. We focus in bringing unique ingredients and cooking techniques from Kerala to the rest of the world.
The Role:
We are looking for a skilled and dedicated Chef to join our team full-time at the Annerley branch. The ideal candidate should have extensive experience in Indian cuisine and will be responsible for upholding our high standards of food quality and presentation. We are willing to provide sponsorship for the suitable applicant.
- Prepare and ensure all dishes adhere to established standards, portion control, and presentation guidelines.
- Collaborate with management and team members to resolve issues and ensure dishes are prepared and presented properly.
- Oversee food rotation, hygiene practices, and compliance with occupational health and safety protocols.
- Plan and execute menus with proficiency.
- Expertise in preparing Tandoor dishes.
- Minimise food wastage and manage labour costs efficiently.
- Work with management to set daily and weekly production goals.
- Monitor and maintain optimal stock levels to control food costs.
- Ensure all ingredients are fresh and of the highest quality.
- Supervise and train junior kitchen staff effectively.
- Prepare curries, sauces, and desserts as required.
- Demonstrate strong organizational skills.
- Maintain the highest standards of quality in all kitchen-prepared food.
About You:
- Minimum 2 years of experience in a similar role.
- Desired to have Certification in Commercial Cookery (Cert III, IV or Diploma) or other relevant qualifications.
- Strong attention to detail and ability to follow recipes accurately.
- Excellent time management skills.
- Flexibility to work in a fast-paced and dynamic environment.
