Full job description

A full-time position of Chef at our Indian Restaurant, namely, Mitran Da Dhaba Melbourne Pty Ltd trading as Mitran Da Dhaba Kalkallo, situated at Shop 1, Kallo Town Centre, 44 Toyon Road, Kalkallo, VIC 3064 is available for immediate start for 38 hours a week. The candidates should be qualified in at least a Certificate IV in Commercial Cookery and should have a minimum of 2 years of post-qualification relevant experience as a Chef in Australia on a full-time basis. Any additional qualification in hospitality management will be highly desirable.

The candidate should be able to undertake the following duties and responsibilities:

· Planning, designing and modifying Restaurant menus taking inputs from senior management, from the Restaurant Manager and other cooking staff

· ⁠Introducing new recipes and discussing recipes and cooking procedures with the senior management

· ⁠Prepare and/or supervise the cooking of all dishes on menu

· ⁠Supervise, guide and co-ordinate activities of all cooks in the kitchen

· ⁠Oversee and supervise all kitchen staff

· ⁠Ensure consistent and smooth functioning of food production areas

· ⁠Exercising effective control over stock purchasing and storage of all food and related items in temperature controlled environment

· ⁠Order and/or requisition supplies to ensure smooth operations

· ⁠To ensure minimum wastage by careful supervision of food preparation methods

· ⁠Implementing quality control procedures regarding preparation and service of food while maintaining attractive presentation with the aim to exceed patron requirements

· ⁠Receiving and actioning feedback of customers relating to food and/or hygiene in coordination with the Restaurant Manager and in accordance with the company policies

· ⁠Maintaining cleanliness & hygiene of the kitchen in accordance with the NSW food safety laws

· ⁠Training cooks and junior staff and demonstrating new cooking techniques and equipment to staff

· ⁠Calculating the cost price of food items in consultation with the Restaurant Manager and controlling overall food cost budget

· ⁠Liaising with Restaurant Manager/Senior Management regarding day to day restaurant operations
