Cook – Japanese Restaurant (Full-Time)

Moon Sushi

Location: Menai, NSW
Employment Type: Permanent Full-Time
Salary: $79,430 – $80,002 plus superannuation per annum

Moon Sushi is a busy and well-established Japanese restaurant located in Menai, NSW. We are seeking an experienced, reliable and motivated Cook to join our kitchen team on a full-time basis.

Key Responsibilities

  • Prepare and cook a variety of Japanese dishes in accordance with established recipes and quality standards
  • Prepare sushi rice, seafood, meat, vegetables, sauces and other ingredients for daily service
  • Cook hot dishes including rice dishes, noodles, soups, grilled and fried menu items
  • Prepare seafood and ingredients for sushi and sashimi service
  • Check the quality and freshness of ingredients and finished dishes
  • Maintain consistent food presentation, portion sizes and preparation standards
  • Monitor food stock levels and assist with ordering and stock rotation
  • Store ingredients and prepared food safely and appropriately
  • Maintain a clean, organised and hygienic kitchen environment
  • Comply with food safety, sanitation and workplace health and safety requirements
  • Coordinate with other kitchen staff to ensure timely food preparation during busy service periods
  • Assist with training and supervising junior kitchen staff where required

Skills and Experience

The successful applicant will have:

  • A relevant Certificate III or higher qualification in Commercial Cookery or a related field; or at least three years of relevant work experience
  • At least one year of recent experience working as a Cook in a commercial kitchen
  • Proven experience preparing Japanese cuisine
  • Experience in fish preparation, filleting and portioning seafood
  • Ability to work independently in the sushi and sashimi section
  • Sound knowledge of food preparation, storage, hygiene and food safety procedures
  • Strong organisational, communication and teamwork skills
  • Ability to work efficiently and consistently in a busy kitchen environment
  • Availability to work a flexible roster, including evenings, weekends and public holidays

IMPORTANT REQUIREMENTSJapanese Cuisine Experience is ESSENTIAL

Applicants must have demonstrated experience preparing Japanese dishes and working with Japanese ingredients, including sushi preparation, sushi ingredients and Japanese hot food.

Sushi & Sashimi Section Experience is ESSENTIAL

Applicants must have experience handling and preparing fish for sushi and sashimi service, including filleting, portioning and preparing seafood to a high standard. Applicants should be capable of working independently in the sushi and sashimi section.

Applications from candidates without Japanese cuisine experience and sushi/sashimi section experience will not be considered.
