Cook (Japanese Cuisine) — Moon Sushi (Menai, NSW)

Moon Sushi is a busy, high-quality Japanese restaurant located in Menai, NSW. We are seeking an experienced, reliable, and passionate Full-time Cook to join our dedicated kitchen team.

We are looking for someone who takes pride in the quality and presentation of Japanese food and thrives in a fast-paced team environment.

Employment Conditions

Position:Permanent Full-time

Hours: Approximately 38 hours per week (Rostered shifts, including evenings, weekends, and public holidays)

Salary: $79,430 – $80,002 plus superannuation per annum

Location: Menai, NSW Critical

Requirement (Must-have)

Fish Filleting & Preparation Skills: Candidates must possess exceptional, hands-on experience in cleaning, skinning, filleting, and preparing various types of fresh fish for high-quality sushi and sashimi.

This skill is compulsory for this role.

Key Responsibilities

Prepare and cook a wide range of Japanese dishes in accordance with established recipes and quality standards.

Prepare sushi rice, seafood, meat, vegetables, sauces, and other essential ingredients for daily service. Cook hot kitchen dishes, including rice dishes, noodles, soups, and grilled/fried items.

Check the freshness and absolute quality of ingredients and finished plates.

Maintain consistent portion sizes, preparation standards, and high-quality food presentation.

Monitor food stock levels, systematically rotate inventory, and assist with ordering.

Safely store ingredients and semi-prepared foods in accordance with health regulations.

Maintain a clean, organized, and hygienic kitchen environment.

Fully comply with food safety, sanitation, and workplace health and safety (WHS) requirements.

Coordinate and communicate effectively with other kitchen staff to ensure timely food preparation during peak hours.

Assist with training and supervising junior kitchen staff where required.

Skills and Experience Required Fish filleting and preparation skills (Essential).

A relevant Certificate III or higher qualification in Commercial Cookery (or a related field), OR at least three (3) years of relevant professional kitchen experience.

At least one (1) year of recent experience working as a Cook in a busy commercial kitchen.

Proven experience preparing Japanese cuisine, including both sushi preparation and hot kitchen dishes.

Sound knowledge of food safety, hygiene, proper food storage, and temperature control.

Ability to work efficiently, multi-task, and stay composed under pressure during busy service periods.

Strong organizational, communication, and teamwork skills. Flexibility to work rotating shifts, including nights, weekends, and public holidays.
