The Role
As an Overnight Pastry Chef at Sweet Belem Barangaroo, you’ll be responsible for preparing, producing and finishing our pastry range overnight so the store is ready for morning trade.

Working from around 10:00pm to 6:00am, you’ll play an important role in maintaining product quality, consistency and presentation across our core range, including Portuguese pastries, cakes, donuts and other bakery products.

This role is suited to someone who enjoys working independently, takes pride in organisation and understands the importance of having every product ready, fresh and presented to standard before the doors open.

You’ll work closely with the Head Pastry Chef and wider pastry team, following established recipes, production plans and food-safety standards.

Key Responsibilities

  • Prepare, bake, fill, finish and present pastries to Sweet Belem standards
  • Follow daily production plans and complete required volumes before morning trade
  • Produce consistently high-quality pastries, cakes and bakery items
  • Follow recipes, portioning and presentation standards accurately
  • Monitor baking times, temperatures and product quality
  • Prepare fillings, creams, toppings and other pastry components
  • Organise and maintain a clean, efficient overnight production area
  • Rotate stock and correctly label, date and store ingredients and finished products
  • Monitor ingredient levels and report shortages to the Head Pastry Chef
  • Minimise product waste while maintaining quality
  • Follow food-safety, hygiene and workplace-safety procedures
  • Complete cleaning, equipment checks and end-of-shift handover
  • Communicate clearly with the morning pastry and front-of-house teams
  • Maintain calm, organised production during high-volume periods

What We’re Looking For

  • Previous experience as a Pastry Chef, Pastry Cook or Baker
  • Relevant pastry, baking or commercial cookery qualifications are highly regarded
  • Experience working in a commercial bakery, pastry kitchen, hotel or high-volume production environment
  • Strong knowledge of pastry preparation, baking and finishing techniques
  • Ability to follow recipes and production plans accurately
  • Strong attention to detail and pride in presentation
  • Ability to work independently and manage time effectively
  • Reliable, punctual and comfortable working overnight
  • Calm and organised approach to production
  • Strong understanding of food safety and kitchen hygiene
  • Good communication and teamwork skills
  • Availability to work from 10:00pm to 6:00am, including weekends where required

Experience with laminated dough, custard-based pastries, donuts, cakes or Portuguese pastries is highly regarded, but training will be provided in Sweet Belem’s recipes and production standards.

Typical Shift:
10:00pm–6:00am

Shifts may include weekdays, weekends and public holidays depending on business requirements.
