Summary

Our client, Sammy’s on the Marina, is seeking to add up to three (3) Cooks to its award-winning team. Located at the stunning Glenelg Marina Pier, the restaurant is recognised for its spectacular waterfront views, fresh local seafood and high standard of service. Established in the late 1990s, Sammy’s continues to attract local and international guests through its vibrant menu offerings and commitment to quality dining.

The Cooks will be responsible for preparing, cooking and presenting high-quality meals in accordance with Sammy’s on the Marina’s menu, recipes and quality standards. The role will support the efficient operation of the kitchen by ensuring food is prepared safely, consistently and in compliance with food safety, hygiene and Work Health and Safety requirements.

The typical job responsibilities will include, but are not limited to the following:

  • Prepare, season and cook seafood dishes and other menu items in accordance with established recipes and cooking methods.
  • Prepare ingredients by washing, cutting, measuring and portioning food items before cooking.
  • Operate commercial kitchen equipment safely and efficiently, including ovens, grills, fryers and other cooking appliances.
  • Monitor cooking times, temperatures and food quality to ensure meals are consistently prepared to the required standard.
  • Inspect food supplies and ingredients to ensure freshness, quality and compliance with food safety requirements.
  • Maintain high standards of food hygiene, cleanliness and sanitation in accordance with requirements and workplace procedures.
  • Store food safely, rotate stock and minimise food wastage through effective portion control.
  • Assist with receiving, checking and storing food deliveries and maintaining appropriate stock levels.
  • Work collaboratively with the Chef and kitchen team to ensure efficient food preparation and timely service during busy periods.
  • Comply with Workplace Health and Safety (WHS) policies, food safety regulations and all kitchen operating procedures.
  • Clean and maintain kitchen equipment, utensils and food preparation areas to ensure a safe and hygienic working environment.
  • Perform other cook-related duties consistent with the position as directed by the Chef.

Applicants must meet the following minimum requirements to be considered for the role:

  • Certificate III in Commercial Cookery or equivalent qualification.
  • At least one year of relevant experience as a Cook in a commercial kitchen, including seafood preparation and cooking in a high-volume restaurant environment.
  • Proven ability to prepare and cook a range of seafood dishes, including fish, prawns, mussels, calamari, oysters, scallops or similar seafood items.
  • Ability to produce modern Australian dishes consistently in accordance with established recipes, portioning requirements and presentation standards.
  • Experience operating grills, fryers, ovens and other commercial kitchen equipment during lunch, dinner, weekend and peak service periods.
  • Sound understanding of food safety, hygiene, temperature control, stock rotation and safe handling of fresh seafood and perishable ingredients.
  • Ability to work efficiently with chefs and kitchen staff in a fast-paced restaurant environment while maintaining quality, timing and presentation standards.
  • Reliable, punctual and available to work flexible shifts, including evenings, weekends and public holidays.
