About the Role

We are seeking an experienced Production Chef to join our food manufacturing operation, working across cold and hot kitchens. This role is suited to a qualified professional with strong experience in high-volume production, food safety compliance, and HACCP documentation within a regulated manufacturing environment.

Key Responsibilities

  • High-volume food production across cold & hot kitchen operations
  • Preparation and assembly of products to strict specifications and recipes
  • Complete and maintain HACCP paperwork, temperature logs, CCP monitoring, and production records
  • Ensure full compliance with Australian food safety regulations (FSANZ / NSW Food Authority)
  • Maintain product quality, portion control, consistency, and presentation
  • Follow and enforce SOPs, allergen management, and hygiene standards
  • Assist with stock control, batch tracking, and date coding
  • Maintain a clean, safe, and organised production environment
  • Meet production deadlines and operational targets
  • Support audits, inspections, and continuous improvement initiatives

Essential Requirements (Mandatory)

  • Completed commercial cookery apprenticeship
  • Relevant trade qualifications (Certificate III in Commercial Cookery or equivalent)
  • Proven experience as a Production Chef or Manufacturing Chef
  • Experience in high-volume food production environments
  • Strong knowledge of HACCP systems, CCPs, and food safety documentation
  • Sound understanding of Australian food regulations
  • Experience working in both cold production and hot kitchens
  • Good written and spoken English – must be able to understand, read, and speak English clearly for safety, documentation, and communication
  • Strong organisational skills and attention to detail
  • Ability to work efficiently in a team-based production environment

Desirable (Highly Regarded)

  • Experience in airline catering, central kitchens, or large-scale food manufacturing
  • Food Safety Supervisor certification
