The Dry Dock, a historic pub first established in 1857, has been a long-standing fixture on the Balmain Peninsula, an area famed for its pub culture. The venue is undergoing a transformative renovation and is set to re-open with a standout food, beverage, and service offering.

The Role:

Reporting to our hatted Head Chef, Ben Sitton, you will ignite your passion for excellence in product and execution. Working along side our senior kitchen team you will support all aspects of kitchen operations and service. Your contribution will play a crucial role in defining the service culture and guest experience.

Your Responsibilities

  • Oversee the day-to-day operations of your section and kitchen, including, but not limited to, food cogs, a food safety program, and menu development.
  • Accountable for all aspects of section operations.
  • Responsible for delivering exceptional delivery standards and consistent products.
  • Responsible for kitchen presentation and cleanliness.
  • Ensures the venue is compliant, which may include completing HEM Safe inspections.

About you:

  • 2+ years experience in a Hatted or premium venue
  • Attention to detail and commitment to food quality and presentation.
