About the role

The Shamrock Echuca is seeking a talented and passionate Chef to join our kitchen team on a full-time basis. Based in The Shamrock Hotel Echuca

Key responsibilities

  • Prepare and cook a variety of dishes according to established recipes and quality standards, ensuring consistency across all service periods
  • Manage food preparation including sourcing, receiving, storage and handling of ingredients with strict adherence to food safety protocols
  • Maintain cleanliness and organization of the kitchen, including equipment maintenance and proper sanitation procedures
  • Supervise and mentor kitchen staff, delegating tasks effectively and ensuring team members adhere to operational standards
  • Monitor portion control and food costs to maintain profitability whilst delivering excellent value to customers
  • Develop and suggest new menu items and seasonal specials that reflect current culinary trends and local preferences
  • Liaise with front-of-house staff to ensure smooth service and respond promptly to any guest feedback or special requests
  • Ensure compliance with all health and safety regulations, including food handling certification requirements
  • Maintain accurate records of inventory, stock rotation, and food waste management

What we're looking for

  • Formal culinary training or equivalent practical experience working in professional kitchen environments
  • Proven experience as a Chef or senior kitchen position with demonstrated ability to manage kitchen operations
  • Strong knowledge of food preparation techniques, cooking methods, and kitchen safety standards
  • Current or ability to obtain Food Handling Certification and understanding of Australian food safety legislation
  • Excellent organizational and time management skills with the ability to work efficiently during peak service periods
  • Leadership capability with experience training and motivating kitchen staff
  • Strong communication skills and ability to work collaboratively within a team environment
  • Creative mindset with the ability to innovate whilst maintaining quality standards
  • Flexibility to work variable hours including evenings, weekends and public holidays as required by hospitality operations
  • Physical fitness and ability to work in a fast-paced, hot kitchen environment
