NEW RESTAURANT OPENING – MITCHAM

YASSAS – The Greek Way is looking for an experienced, energetic and commercially minded Restaurant Manager to lead our exciting new Mitcham restaurant.

The successful candidate will initially work alongside our team at Ringwood, learning the YASSAS systems, menu, service standards and culture before transitioning to Mitcham and taking responsibility for the new venue.

This is a great opportunity for someone who wants more than simply managing shifts. You’ll be involved in building the team, establishing the venue culture and launching a brand-new YASSAS restaurant.

About the Role

As Restaurant Manager, you’ll take ownership of the day-to-day performance of YASSAS Mitcham.

You’ll lead the FOH team while working closely with the Head Chef and management to deliver excellent guest experiences, strong operational standards and a commercially successful restaurant.

Your responsibilities will include:

• Leading the day-to-day FOH operation
• Recruiting, onboarding, training and developing the new Mitcham team
• Creating and managing staff rosters
• Managing labour costs in line with business targets
• Leading busy lunch, dinner and weekend services
• Maintaining YASSAS service and presentation standards
• Creating a warm, energetic and welcoming guest experience
• Managing reservations, table allocation and service flow
• Working closely with BOH to ensure smooth communication and service
• Managing guest feedback and resolving issues professionally
• Driving functions, group bookings and local opportunities
• Identifying opportunities to increase average spend and restaurant sales
• Maintaining beverage, stock and inventory controls
• Managing opening and closing procedures
• Ensuring RSA, food safety and workplace compliance
• Training the team on menu knowledge, upselling and service standards
• Monitoring restaurant cleanliness and presentation
• Supporting local promotions and YASSAS events
• Reporting operational performance to senior management

What We're Looking For

We’re looking for someone who is visible on the floor and leads from the front.

Ideally, you will have:

• Previous Restaurant Manager or Assistant Restaurant Manager experience
• Experience within a busy, high-volume restaurant environment
• Strong leadership and people-management skills
• Experience recruiting, training and developing hospitality teams
• Strong understanding of rostering and labour management
• Excellent guest-service and problem-solving skills
• Commercial awareness and an understanding of restaurant KPIs
• Confidence managing reservations and high-volume services
• Ability to drive sales without compromising hospitality
• Strong communication and organisational skills
• Current Victorian RSA or ability to obtain one
• Availability across evenings, weekends and public holidays

Experience in Greek or Mediterranean restaurants is an advantage but not essential. We’re more interested in finding a strong hospitality operator who understands people, service and commercial performance.
