Full job description

Alba Italian Restaurant is seeking a qualified and experienced Chef to join our kitchen team in Newtown.

Alba is an independently operated Italian restaurant specialising in the cuisine of Southern Italy. Our menu focuses on house-made pasta, traditional recipes, quality Australian produce and modern interpretations of regional Italian dishes.

About the role

The Chef will be responsible for preparing and presenting dishes consistently, supporting the daily operation of the kitchen and maintaining Alba’s food-quality and food-safety standards.

Main responsibilities

  • Prepare, cook and present menu items according to established recipes and presentation standards.
  • Assist with the preparation of fresh pasta, sauces, meat, seafood, vegetable dishes and desserts.
  • Monitor food quality at all stages of preparation and service.
  • Manage assigned kitchen sections during preparation and service.
  • Assist with menu development, monthly specials and recipe testing.
  • Monitor and maintain food quality at all stages of preparation and service
  • Monitor and control stock levels, food storage, portion sizes and wastage
  • Follow food safety, hygiene and WHS procedures
  • Assist with stock control, supplier liaison and inventory management
  • Assist with receiving, checking and storing deliveries.
  • Work collaboratively with the Head Chef and other kitchen employees.
  • Provide guidance and training to junior kitchen employees where required.

Skills and experience

Applicants should have:

  • Proven experience as a Chef de Partie in a high-volume à la carte environment
  • A relevant qualification in commercial cookery or hospitality or at least 3 years of relevant experience.
  • Strong knowledge of food preparation, cooking techniques, food safety and kitchen organisation.
  • The ability to manage a section independently during service.
  • Good communication, teamwork and time-management skills.
  • A genuine interest in Italian and Southern Italian cuisine.
  • Experience preparing fresh pasta or regional Italian dishes will be highly regarded.

Employment conditions

  • Permanent, full-time employment.
  • Salary between $75,000 and $80,000 based on experience
  • Approximately 38 hours per week, with reasonable additional hours where required.
  • Evening, weekend and public-holiday work will be required.
