Chef – Full Time

Mr So Chinese Restaurant | Wilton NSW

Mr So Chinese Restaurant is an established Chinese restaurant in Wilton offering dine-in, takeaway and delivery services.

Our menu covers a wide range of traditional Chinese-style dishes including stir-fries, braised dishes, steamed and deep-fried dishes, noodles, beef, lamb, poultry, pork and seafood, together with selected Thai and Australian-style meals.

We are looking for an experienced Chef to join our kitchen team on a full-time, ongoing basis.

About the role

This is a hands-on kitchen position. You will be involved in daily food preparation and cooking while also helping organise kitchen preparation and service.

Working with our cooks and front-of-house team, you will be responsible for maintaining consistent food quality, keeping service running efficiently and providing practical guidance to other kitchen staff when required.

Key responsibilities include:

• Preparing and cooking dishes from the restaurant's established menu;• Preparing, cutting, marinating and portioning meat, seafood, vegetables and other ingredients before service;• Cooking using a range of techniques including wok cooking, stir-frying, braising, steaming and deep-frying;• Organising daily kitchen preparation according to bookings, dine-in trade, takeaway orders and delivery demand;• Checking the flavour, quality, portion size and presentation of meals before service;• Coordinating the timing of food preparation and customer orders during busy service periods;• Communicating with front-of-house staff regarding orders, dietary requirements and customer requests;• Monitoring stock levels and ingredient usage and advising management when supplies need to be ordered;• Checking incoming food supplies for freshness and quality;• Ensuring ingredients are stored and rotated correctly;• Maintaining food safety, hygiene, refrigeration and temperature-control standards;• Assisting with improvements to existing menu items and the introduction of new or seasonal dishes; and• Providing practical guidance and training to cooks and other kitchen staff when required.

What we are looking for

The successful applicant should have:

• A relevant qualification in Commercial Cookery, Kitchen Management or a related field, or an equivalent combination of training and relevant experience;• At least one year of practical experience in a commercial restaurant kitchen;• Good food preparation and knife skills;• Experience preparing and cooking meat, poultry, seafood and vegetable dishes;• Experience using a range of commercial cooking methods, including frying and high-volume food preparation;• A good understanding of food safety, hygiene, portion control and kitchen organisation;• The ability to work efficiently under pressure during busy service periods;• Good time-management and organisational skills;• Good communication skills and sufficient English to communicate effectively with kitchen staff, management and front-of-house staff; and• The ability to work independently as well as part of a small kitchen team.

Experience in Chinese or Asian restaurant cooking, including wok cooking, braising, steaming and deep-frying, would be highly regarded.
