COCKTAIL BARTENDERS

East Pavilion | Shoal Bay Country Club

Build the opening team at East Pavilion

Opening in September 2026, East Pavilion is a brand-new, multi-million dollar, 220-seat waterfront restaurant within the iconic Shoal Bay Country Club precinct, directly opposite Shoal Bay Beach.

Inspired by the port cities and coastlines of Asia, East Pavilion celebrates bold, generous Chinese cooking designed to be shared. Wok-fired dishes, premium produce and genuine hospitality come together in a stunning coastal setting, where two coastlines finally meet at one table.

We're seeking experienced Cocktail Bartenders who thrive in high-volume venues and are passionate about creating exceptional drinks and memorable guest experiences.

The Opportunity

As a Cocktail Bartender, you'll play a key role in delivering a premium beverage experience while working in a fast-paced, high-volume environment.

This is a rare opportunity to join a brand-new restaurant before opening, help shape the bar culture and be part of building an exceptional team from day one.

What You'll Be Doing

  • Prepare and serve high-quality cocktails, wine, beer and spirits
  • Deliver fast, friendly and professional service in a high-volume environment
  • Maintain exceptional product knowledge and beverage presentation
  • Keep the bar clean, organised and service-ready throughout each shift
  • Work closely with the restaurant team to deliver a seamless guest experience

What We're Looking For

  • Previous experience as a Cocktail Bartender in a busy, high-volume venue
  • Strong cocktail knowledge and confidence preparing classic and contemporary cocktails
  • Ability to remain calm and organised during peak service periods
  • Passion for exceptional hospitality and guest experience
  • Current NSW RSA
