Restaurant Manager

Are you a passionate hospitality professional ready to lead a dynamic team in a beautiful Blue Mountains setting?
The Fairmont Resort is seeking an experienced and hands-on Restaurant Manager to oversee the daily operations of our Restaurants and support our busy Conference & Events program.

This is an exciting opportunity for someone who thrives in a guest-focused environment, enjoys mentoring a team, and takes pride in delivering exceptional dining experiences.

This is a limited run ad from the 8th of July to the 5th of August.

About the Role

Reporting directly to the Director of Food & Beverage, this position oversees all aspects of restaurant service, team leadership, and event delivery. You’ll work closely with the Head Chef and senior leadership to ensure the highest levels of service, consistency, and quality across our dining and events offerings.

Key Responsibilities:

  • Lead and motivate the restaurant team – create a positive, professional, and supportive work environment that encourages excellence and team growth.
  • Oversee daily operations – ensure smooth and efficient service across breakfast, lunch, dinner, and events; maintain restaurant presentation and uphold brand standards.
  • Work closely with the Head Chef – coordinate menus, service flow, and guest feedback to deliver memorable experiences and efficient communication between front and back of house.
  • Manage rosters and labour costs – prepare effective staff schedules that balance operational needs with wage budgets.
  • Stock and inventory control – monitor and order supplies, manage stock levels, minimise wastage, and ensure accurate reporting.
  • Training and development – onboard new staff, provide continuous training, and coach team members to maintain service excellence.
  • C&E event coordination – liaise with the functions team and oversee the delivery of weddings, conferences, and special events, ensuring smooth execution and client satisfaction.
  • Hands-on leadership – lead by example on the floor, ensuring guests receive attentive, efficient, and friendly service at all times.
  • Maintain compliance and safety – uphold all WHS, RSA, and food safety standards to ensure a safe and compliant workplace.

What We’re Looking For

  • Experienced hospitality leader with prior experience as a Restaurant or Food & Beverage Manager (or strong Assistant Manager ready for the next step).
  • Excellent people management skills, with the ability to train, motivate, and retain a high-performing team.
  • Strong organisational and multitasking abilities, with proven success managing service operations and events simultaneously.
  • Customer-focused mindset, with a genuine passion for creating memorable dining experiences.
  • Confident communicator – able to liaise effectively with staff, chefs, and management.
  • Financial experience– able to manage wage costs, budgets, and inventory efficiently.
  • Flexible availability, including evenings, weekends, and event schedules.
  • Positive attitude and professional presentation, reflecting the high standards of the resort.
