At That’s Amore Cheese, we don’t just make cheese — we craft moments of joy.

As a proudly Australian-owned and award-winning producer of authentic Italian-style cheeses, we supply restaurants, delis and supermarkets across Australia. With a passionate team of around 100 people, we are committed to quality, tradition and innovation in everything we do.

We are currently looking for a Dairy Product Maker to join our production team in Thomastown.

About the Role

Reporting to the Production Manager, you will be hands-on in the cheese-making process, ensuring our products meet the highest quality and food safety standards.

Your responsibilities will include:

  • Prepare and process milk for cheese production in accordance with production schedules
  • Monitor pasteurisation, fermentation and curd development processes
  • Perform curd cutting, cooking, draining and stretching (including fresh and pasta filata styles such as mozzarella and burrata)
  • Moulding, portioning and forming cheeses to specification
  • Working to specification/quality standards
  • Preparing and processing milk
  • Mould, portion and form cheeses to specification
  • Monitor moisture, texture and quality parameters throughout production
  • Examining products for defects
  • Conduct quality checks and accurately record batch and production data
  • Ensure compliance with HACCP, GMP and internal food safety procedures
  • Compiling quality assurance reports, maintaining documentation and reporting findings
  • Ongoing assessment of product quality
  • Examining products for defects and grading produce
  • Monitoring moisture, texture and quality parameters
  • Quality checks during production
  • Set up, operate and monitor dairy production machinery and equipment
  • Adjust machine settings to maintain optimal performance and product consistency
  • Monitoring the filling of containers and adjusting machines to maintain volume and seal quality recording information such as numbers, weight, times and dates.
  • Identify and troubleshoot minor mechanical or process issues
  • Perform routine equipment inspections and basic preventative maintenance
  • Report equipment faults promptly to maintenance or supervisors
  • Maintain accurate production and downtime records
  • Assist with weighing, packing and labelling finished products
  • Packing, attaching pre-printed labels, and counting, weighing and measuring amounts.
  • Checking the cleanliness and operation of machines, equipment and containers
  • Support production line operations to meet daily output targets
  • Collaborate with team members to ensure smooth workflow and timely order fulfilment
  • Maintain a clean and organised work environment
  • Clean and sanitise equipment and work areas including sanitisation checks in accordance with food safety standards
  • Adhere to workplace health and safety (WHS) policies at all times
  • Participate in continuous improvement initiatives

Skills & Experience

  • Experience in dairy manufacturing, food production or commercial kitchens (preferred but not essential)
  • Understanding of food safety and hygiene standards
  • Experience operating manufacturing or production equipment (advantageous)
  • Strong attention to detail and quality focus
  • Physically fit and comfortable working in a fast-paced production environment
  • Strong teamwork and communication skills
  • Reliable, punctual and safety-conscious

Personal Attributes

  • Strong work ethic and ability to work independently.
  • Team player with good communication skills.
  • Flexible and adaptable to changing workloads.
  • Positive attitude towards maintaining a clean and safe work environment.

Formal dairy or food technology qualifications are highly regarded but not essential, training will be provided for the right person.
